Oro del Sol oil

The varieties selected for the olive oil extraction are from organic farming and are grown in a particular area called “Terra delle Gravine”. The cold extraction and the constant attention to the quality allow us to have this excellent extra virgin oil with the scent of this sun-kissed land in it.

Cultivar: Cima di Melfi,Coratina and Carolea.

Growing and production area: Terra delle Gravine, between Laterza and Ginosa (TA).

Soil and altitude: red, calcareous, from 90 to 350 m a.s.l.

Working techniques: biological with controlled grassing at alternate rows.

Harvest: manual harvesting by aid of mechanized harvesters during veraison.

Extraction: continuous cold cycle. Unfiltered oil.

Acidity: 0,42 % in oleic acid.

Colour: golden yellow with pale green highlights.

Aroma: intense and persistent.

Flavor: subtle fruity, slightly bitter and spicy.
